Prep: 1. Preheat oven to 350 and grease a 10 inch bundt or tube pan ( a 9x13 will work in a pinch). 3. Peel, core and chop the apples into 1/2-to-3/4-inch chunks. 4. Chop walnuts (if using). Make: 1. Toss apples with cinnamon and 1/2 cup granulated sugar, and set aside. 2. Sift flour, baking powder, and salt together in a large bowl. 3. In a medium bowl, whisk together oil, orange juice, remaining 2 cups of sugar, vanilla, and eggs. 4. Stir wet ingredients into dry ingredients. 5. Stir in the walnuts, if you are using them. 6. Pour half of batter into prepared pan. Spread half apple chunks over it. 7. Pour remaining batter over apples, and arrange the remaining apples on top. 8. Bake for about 1 1/2 hours, or until done through. (Use a long skewer to check that it's done all the way through) Let cool. 9. Dust with powdered sugar and serve.
This is a great cake for fall or winter, homey and hearty. It's also great with pecans instead of walnuts and topped with homemade whipped cream.
