Prep: 1. Peel carrots. 2. Chop fresh thyme. Make: 1. Saute carrots, broth, olive oil, and salt. 2. Simmer, covered, over medium heat until carrots are tender and most of the liquid has been absorbed,15 to 20 minutes. 3. Add thyme and cook for one minute more. 4. Serve
You can use chicken broth instead of vegetable if preferred. Shake this up by using tarragon, parsley, or oregano in place of the thyme.
