Prep: 1. Grate: cabbage and carrots. Make: 1. Using a blender, combine egg, 1 tablespoon vinegar, salt on high power. 2. Pour in olive oil slowly while blending, until thick. 3. In a large bowl, combine the cabbage and carrots. 4. Add the egg mixture, remaining vinegar, honey, and salt, toss to combine, and serve.
You can also use store-bought mayonnaise in place of the egg, vinegar and olive oil if you prefer.
