Pesto Steak and Arugula Pizza

Ingredients

  • 1 pound steak, cut into 1/4 inch slices
  • 4 tablespoons pesto
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon cornmeal
  • 1 cup cherry tomatoes, halved or quartered if large
  • 1 cup shredded mozzerella
  • pinch of sea salt, to taste
  • 2 cups arugula
  • 1/8 teaspoon crushed red pepper, or more to taste (optional)
  • 1 ball pizza dough

Directions

Prep: 1. Preheat oven to 450 (500 if your oven goes that high). 2. Juice lemon. Combine pesto and lemon juice in small bowl. 3. Slice steak into 1/4 inch slices. Evenly brush beef steak with 1 tablespoon pesto mixture. 4. Cut tomatoes in half. Make: 1. Heat oil in a skillet, add steak and cook for about 2-5 minutes per side depending on desired doneness. 2. Sprinkle baking sheet with cornmeal and roll out dough on baking sheet. 3. Spread dough with remaining pesto mixture. 4. Top with tomatoes and cheese. 5. Bake for 10-12 minutes or until crust is golden brown. 6. Remove pizza from oven and top evenly with arugula and steak slices; sprinkle with red pepper, as desired.
