Prep: 1. Chop onions, garlic and chipotle. 2. Slice celery 3. Shred chicken. Make: 1. Heat oil a large pot over medium heat. Add onion, celery and garlic and cook, stirring occasionally, until softened, about 5 minutes. 2. Add chicken broth, chicken, hominy and chipotle in adobo. Simmer 5 minutes. 3. Serve with tortilla chips on the side (if desired).
Kick it up a notch: top each bowl with some sliced avocado.
