Prep: 1. Mince garlic. 2. Zest lemon (need ~2 tablespoons lemon zest). Make: 1. Mix seasonings well. 2. Spread spice mixture all over pork and inside any cavities. 3. Put pork, fat side up, in a slow cooker and cook on low for 6 to 8 hours. Serve.
