Mahi Mahi with Mango Salsa

Ingredients

  • 1 mango, peeled, pitted and finely diced
  • 1 small cucumber, finely diced
  • 1/4 cup fresh basil leaves, chopped
  • 1 lime, juiced
  • 2 tablespoons honey
  • 2 tablespoons extra virgin olive oil
  • 4 mahi mahi fillets
  • 1 tablespoon canola oil
  • salt and pepper, to taste

Directions

Mango Salsa: 1. Dice/chop mango, cucumber and basil. 2. Toss with lime juice, honey, and olive oil. Season with salt and pepper and set aside. Mahi Mahi: 1. Pat fish dry, drizzle with oil, and season with salt and pepper. 2. Heat a cast-iron skillet or grill pan over medium-high heat. 3. Cook fish, in batches if necessary. Don't overcrowd the pan. 4. Cook fish undisturbed until the fillets release easily from the pan, about 6 min. Flip and cook until opaque throughout, another 4-6 min. 5. Serve fish with mango salsa on the side.
