An Elegant Tuna Salad

Ingredients

  • 6 ounces cherry tomatoes, halved
  • 1/3 cup fresh basil, chopped
  • 1 shallot, minced
  • 4 tablespoon lemon juice (from about 1 lemon)
  • 12 ounces canned tuna
  • 15 ounces canned chickpeas
  • 2 cups arugula
  • 1/4 cup extra virgin olive oil
  • salt and pepper, to taste

Directions

Prep: 1. Halve cherry tomatoes and chop basil 2. Juice lemon and mince shallot. Make: 1. Whisk together shallot, lemon, olive oil, salt and pepper. 2. Combine cherry tomatoes, basil, tuna, chickpeas, arugula, olive oil, in a bowl and toss with dressing.
