Prep: 1. Heat grill to medium-high heat. 2. Chop cilantro. 3. Zest and juice 1 lime. Cut other into wedges. 4. Shred cabbage finely. 5. Slice avocado, sprinkle with a little of the lime juice. 6. Slice fish into 8 1/2" thick pieces Make: 1. Combine mayonnaise, cilantro and the zest and juice of one lime. 2. Thread each piece of fish lengthwise onto a skewer. Drizzle with olive oil and season with salt and pepper. 3. Wrap the tortillas (if using) in tin-foil. Place on an edge of the grill where the heat is indirect to warm. Grill the fish over direct heat for 2 minutes, then flip and grill for another minute, or until just cooked through. 4. Double layer the tortillas or lettuce wraps. Spread with cilantro mayo and scatter with cabbage. Place two skewers on each taco then remove skewers. Top with avocado and serve immediately with lime wedges and remaining cilantro-mayo on the side.
