Orange and Cumin Scented Pork Loin

Ingredients

  • 1 3 pound pork loin, tied at 2" intervals
  • 2 tablespoons extra virgin olive oil
  • 1 1/2 teaspoons ground cumin
  • 2 oranges, juiced
  • 1/4 cup white wine vinegar
  • 2 tablespoons orange marmalade

Directions

Prep: 1. Preheat oven to 400. 2. Juice orange. Make: 1. Heat oil in a large, heavy bottomed skillet over medium-high heat. Add the pork loin and cook until browned on all sides, about 8 minutes. 2. Meanwhile, whisk olive oil, cumin, 1/2 cup orange juice, vinegar and marmalade. 3. Transfer pork to a baking dish (it should fit snugly.) Drizzle orange mixture over the top. 4. Roast pork, basting frequently with juices, until a thermometer placed in the thickest part of the loin reads 140, about 45 minutes. Let rest 10 minutes before slicing.

Notes

This is a great way to get a pork loin on the table quickly. If you have a little extra time, you can take this recipe up a notch by marinading the pork in the orange mixture before searing and reduce the heat to 325 and roast for 3 hours.
