Gatheredtable
adapted from Gwyneth Paltrow, "It's All Good"

Ingredients

  • 1 small onion, roughly chopped
  • 2 cloves garlic, roughly chopped
  • 8 fresh sage leaves
  • 8 fresh basil leaves
  • 1 tablespoon dried thyme leaves
  • 1 tablespoon dried rosemary leaves
  • 1/4 cup fresh italian parsley
  • 1 pound ground turkey
  • sea salt and black pepper, to taste
  • 1 jar marinara sauce
  • 3 tablespoons extra virgin olive oil

Directions

Prep: 1. Roughly chop onion and garlic. 2. Combine the onion, garlic and herbs in a food processor or blender and process until finely chopped. Transfer to a large mixing bowl. 3. Add turkey with salt and pepper, to taste. Mix well, then roll into golf ball-sized meatballs. Make: 1. Heat marinara in a large sauce pan. Keep at a gentle simmer. 2. Heat oil in a large non-stick skillet over medium-high heat. Cook meatballs in batches until browned all over, about 2-3 minutes per side. 3. Transfer meatballs to the simmering tomato sauce. Cook the meatballs in the sauce for about 30 minutes, stirring occasionally. 4. Serve with pasta, bread for dipping, veggies or side of choice.
