Turkey, Black Bean and Sweet Potato Chili

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, finely chopped
  • 1 pound sweet potatoes, peeled and cut into 1" pieces
  • 2 tablespoons extra virgin olive oil
  • 1 pound ground turkey
  • 1 teaspoon ground cumin
  • 3/4 teaspoon chili powder
  • 28 ounces canned whole peeled tomatoes
  • 1 cup water
  • 14 ounces canned black beans, drained and rinsed
  • 1/4 cup chopped fresh cilantro, for serving

Directions

Prep: 1. Chop onion and garlic. 2. Peel sweet potatoes and cut into 1" pieces. Make: 1. Heat oil in a Dutch oven or sauce pan over medium-high heat. 2. Season turkey with salt and pepper and cook, breaking up, until its liquid has been released and the meat starts to brown (~8 minutes). 3. Add onion and garlic; cook until softened, about 5 minutes. 4. Add the spices and cook for another minute, just until fragrant. 5. Stir in sweet potatoes, canned tomatoes and 1 cup water (or broth), bring to a boil, and then reduce to a simmer. 6. Cook for 20 minutes, stirring occasionally. Break up tomatoes as the chili cooks. 7. Add the beans and simmer for another 10-15 minutes, until beans are warm and sweet potatoes are cooked through. Season to taste with salt and pepper. 8. Serve with topped with chopped cilantro.

Notes

If you have beef or chicken broth on hand use that instead of the water.
