Prep: 1. Very thinly slice cucumber. 2. In a bowl, whisk rice vinegar and sugar until dissolved. Add cucumbers and let marinate 30 minutes (or up to 4 hours). 3. Heat grill over medium-high heat. 4. Mince garlic. Chop cilantro, basil, and mint. Make: 1. In a large mixing bowl, combine garlic, cilantro, basil, mint, turkey, bread crumbs, lime juice, sugar, and tabasco. Season to taste with salt and pepper. 2. Form into 4 1-inch-thick patties. Oil the grill and grill patties until cooked through, about 5 minutes per side. 3. Serve on buns with drained cucumber slices on top.
