Prep: 1. Slice/chop: zucchini, onion, garlic. Make: 1. Cook pasta according to package directions. Reserve 1/2 cup of pasta water, then drain. 2. Heat 1 teaspoon of oil in a large skillet over medium-high heat. Add sausage and cook, breaking up, until golden and cooked through, ~10-12 minutes. Transfer to a plate. 3. Add remaining tablespoon oil to the skillet and cook onion, zucchini, and garlic, tossing occasionally, until very tender, ~15 minutes (turn down the heat and add a splash of pasta water if the pan starts to get too dark.) 4. Toss pasta with the sausage, vegetables, parmesan (optional) and 1/4 cup pasta water (add a little more if the pasta seems dry). Season with salt and pepper.
