Prep: 1. Mince garlic and ginger. 2. Wash and roughly chop bok choy. 3. Whisk together soy sauce, fish sauce, and 1/2 cup water. Make: 1. Heat oil in a large skillet over medium-high heat. 2. Add garlic and ginger and cook very briefly until fragrant, about 30 seconds. 3. Add bok choy and stir to coat. 4. Add the soy mixture and cook until the greens begin to wilt, about 3 minutes. Serve immediately.
