Cucumber Feta Salad

Ingredients

  • 2 english cucumber, diced
  • 2 scallions, thinly sliced
  • 4 ounces feta cheese, crumbled
  • 1/4 cup plain yogurt
  • 1 lemon, juiced
  • 1 tablespoon extra virgin olive oil
  • salt and pepper, to taste

Directions

Prep: 1. Dice cucumber and slice scallions. Make: 2. Mix cucumbers, scallions, feta, yogurt, lemon juice, and olive oil. Season with salt and pepper.

Notes

This is best served immediately and not a great candidate for leftovers so make sure you enjoy it all the first day.
