Prep: 1. Preheat oven to 400. 2. Boil water for pasta. 4. Chop scallions, dill, parsley, cucumber, onion, feta. Juice lemon. Make: 1. Cook orzo according to package instructions (when done, drain and pour into a large bowl, toss with lemon juice and 1/2 cup of olive oil. Set aside.) 2. Meanwhile, toss shrimp with remaining 2 tablespoons olive oil and spread out on a baking sheet. Season with salt and pepper. 3. Bake until shrimp are just cooked through, about 5-6 minutes. 4. Toss with shrimp, scallions, dill, parsley, cucumber, onion and feta cheese with orzo. 5. Season to taste with salt and pepper.
You can really use any pasta or grain you like with this versatile dish! If you want you can easily add some quick cooking veggies like asparagus or green beans to the roasting sheet for an all inclusive meal.
