Prep: 1. Cut steak into thin strips lengthwise, against the grain. 2. Mince garlic. Slice peppers and onions. Make: 1. Mix steak in a bowl with the garlic, chili powder and 1 tablespoon of oil. Season with salt and pepper. Toss to coat. 2. Meanwhile, heat a large skillet over high heat with 1 tablespoon of oil. When hot add peppers and onions. 3. Add remaining tablespoon oil and cook steak, in batches if necessary, until browned all over and cooked through, about 5 minutes. 4. Serve beef with peppers and onions and torillas (a carb side in the Gatheredtable Library)
For a paleo version, skip the sour cream and eat the beef wrapped in lettuce instead of tortillas.
