Prep: 1. Preheat oven to 350 if you want to toast the walnuts 2. Chop walnuts, apple, endive and parsley. 3. Toast walnuts at 350. Make: 1. Toss walnuts, apple, endive and parsley together with blue cheese, oil and vinegar. Season with salt and pepper. Serve.
A great way to transition from summer to fall! This salad could also easily be a full meal.
