Potato-Parsnip Mash

Ingredients

  • 1 pound yukon gold potatoes, cut into 2-inch pieces
  • 1/2 pound parsnips, peeled and cut into 1-inch pieces
  • 3 tablespoons extra virgin olive oil
  • 2 scallions, thinly sliced
  • sea salt and black pepper, to taste

Directions

Prep: 1. Peel and cut potatoes into 2-inch pieces. 2. Peel and cut parsnips into 1-inch pieces. Make: 1. Place potatoes and parsnips in a large pot and cover with water. 2. Add a pinch of salt and bring to a boil. Simmer until tender, about 15 minutes. 3. Drain and return to the pot. Mash with olive oil and scallions. Season with salt and pepper.

Notes

This is a great way to add a few extra nutrients to mashed potatoes! If you want to take it up a notch substitute sunchokes for the potatoes. To really make this a special treat, infuse the olive oil by bringing the olive oil to a simmer with a bay leaf or a rosemary sprig for 2 minutes to infuse it with a great herb flavor - strain out the herb before mashing with the potatoes and parsnips.
