North African Beef Stew

Ingredients

  • 1 1/4 pound boneless sirloin steak, cut into 1" pieces
  • 2 tablespoon extra virgin olive oil
  • 1 medium onion, chopped
  • 2 carrots, peeled and cut into 2" pieces
  • 1/4 cup tomato paste
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 2 cups low-sodium chicken broth
  • 1/4 cup chopped fresh mint
  • salt and pepper, to taste

Directions

Prep: 1. cut steak into 1" pieces 2. chop onion, peel carrots and cut into 2" pieces Make: 1. Heat 1 tablespoon oil in a large dutch oven or sauce pot over medium-high heat. 2. Season sirloin with salt and pepper. Cook sirloin in a single layer, stirring occasionally, until browned, about 8 minutes total. Transfer to a plate. 3. Heat remaining tablespoon oil and add onions and carrots. Cook until softened and starting to color, about 5 minutes. 4. Stir in tomato paste and cook one minute. 5. Add spices and cook until fragrant, about 30 seconds. 6. Pour in broth and bring to a simmer. Cover, reduce heat, and simmer until the carrots are crisp-tender, about 10 minutes. 7. Return sirloin to the pan along with any accumulated juices. Cook until heated through, a minute or two. 8. Season with salt and pepper and sprinkle with mint.
