Prep: 1. Preheat broiler to high and adjust oven rack so that is about 6" from the broiler element. 2. Make gremolata: in food processor, mix walnuts, mint, parsley, lemon zest, garlic, salt and pepper plus 2 tablespoons olive oil. Pulse until finely chopped. Adjust seasoning to taste. Make: 1. Season lamb chops with salt and pepper and drizzle with 2 tablespoons of olive oil, tossing to coat. 2. Place on a broiler pan and cook for 6 to 7 minutes per side for medium. 3. To serve top each lamb chop with gremolata.
If you don't have a food processor just finely chop all the ingredients for the gremolata.
