Prep: 1. Juice lime 2. Chop cilantro. Make on the Stovetop: 1. Combine rice, olive oil, salt and 2 cups water in saucepan. 2. Bring to boil. 3. Cover and simmer 40 minutes. 4. Turn off heat, let sit covered additional 10 minutes. 5. Toss with lime juice and cilantro. (Or use a rice cooker, tossing with the lime juice and cilantro when the rice is done)
You can also use white rice and reduce cooking time to about 10-15 minutes.
