Asian Spinach with Peanuts

Ingredients

  • 5 ounces spinach
  • 1/2 tablespoon extra virgin olive oil
  • 1/2 teaspoon soy sauce
  • 1/4 teaspoon sea salt
  • 1 teaspoon fresh ginger grated
  • 1/2 tablespoon white vinegar
  • 1/2 cup roasted peanuts

Directions

Prep: 1. Bring a large pot of water to a boil. 2. Grate ginger. Make: 1. Add spinach to boiling water and simmer, about 1-2 minutes depending on taste. Drain spinach. 2. Meanwhile, whisk together olive oil, soy sauce, vinegar and ginger. 3. Top spinach with peanuts and vinaigrette.
