Prep: 1. Preheat oven to 400. 2. Chop spinach. Make: 1. Heat oil over medium heat and saute spinach until wilted, about 2 minutes. 2. Place the eggs and milk into a mixing bowl and whisk together. 3. Stir the thyme and cheddar into the egg mixture, season with salt and pepper and set aside. 4. Place pie dough into a pie pan. 5. Fill with an even layer of spinach. 6. Pour the egg mixture over the spinach and top with goat cheese. 7. Bake the quiche in the oven for 30-40 minutes or until set in the center and golden brown. 8. Allow to cool slightly before slicing and serving.
