Prep: 1. Preheat grill. 2. If using wooden skewers, soak in water for 10 minutes. 3. Pit and halve apricots. 4. Cut pork into 1 inch cubes and onions into 2 inch wedges. Make: 1. In a small saucepan, heat cayenne (if using) and teriyaki over medium-low until warm; season with salt and pepper. 2. Onto each skewer, alternately thread pork, onion, and apricot. 3. Grill kebabs, brushing with teriyaki sauce often and turning occasionally, until pork is cooked through and apricots begin to char, 12-14 minutes.
In a pinch, dried apricots actually work surprisingly well! For a great variation try sweet soy sauce instead of teriyaki sauce.
