Apricot Blackberry Cobbler

Ingredients

  • 2 pounds ripe apricots
  • 3 tablespoons sugar, divided, plus more for sprinkling
  • 2 teaspoons instant tapioca
  • 2 cups blackberries
  • 1 1/4 cups flour
  • 1/2 cup almond flour
  • 2 tablespoons sugar, plus more for sprinkling
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/2 cup plain yogurt
  • 5 tablespoons cold unsalted butter, diced

Directions

Prep: 1. Pit and quarter the apricots. Put the slices in a shallow, greased, baking dish and sprinkle with 1 tablespoon sugar and tapioca. Toss gently to combine, cover, and let stand until ready to use (up to an hour). 2. Preheat the oven to 350. Make: 1. In a mixing bowl, combine the flour, almond flour, 2 tablespoons sugar, baking powder, baking soda, and salt. Add the yogurt, and diced butter. Combine using your fingers to crumble the ingredients together. 2. Add the blackberries on top of the apricots. Spoon the dough onto the fruit. Sprinkle the top with additional sugar, if desired (raw sugar is great for this if you have it on hand). 3. Bake for 25 to 30 minutes, until the topping is golden brown and the fruit is bubbly.
