Ingredients

  • 1 pound pasta
  • 12 slices bacon, chopped
  • 2 cloves garlic, minced or pressed
  • 12 ounces cherry tomatoes, halved
  • 5 ounce baby spinach
  • 1/2 cup parmesan cheese, plus more for serving
  • sea salt and pepper, to taste

Directions

Prep: 1. Boil water for pasta. 2. Mince garlic and halve tomatoes. 3. Grate cheese. Make: 1. Cook pasta according to package instructions (when done, drain, reserving 1 1/2 cups of pasta water, and return to pot). 2. Meanwhile, cook the bacon in a large skillet over medium-high heat until crisp, about 5 minutes. Remove from the pan with a slotted spoon and transfer to a paper towel-lined plate. Pour off all but 2 tablespoons of the bacon grease from the skillet. 2. Add the garlic and tomatoes to the pan and cook until the tomatoes are just slightly softened, about 2 minutes. 3. Add the the spinach, bacon, garlic-tomato mixture, parmesan, pasta, and as much reserved pasta water as needed for a good consistency. Stir well until combined 4. Season to taste with salt and pepper and serve warm with additional grated Parmesan.
