Prep: 1. Grate parsnips. 2. Chop onion. 3. Chop cilantro. 4. Rinse chickpeas in a colander. Make: 1. Heat oil in a pan over medium-high heat. 2. Add onion and sauté gently until translucent. 3. Add chickpeas, parsnips, turmeric, and salt and sauté. 4. Add water and sauté until parsnips are cooked through. 5. To serve, remove from heat and top with fresh cilantro.
