Pork Tenderloin with Blackberry Mint Sauce

Ingredients

  • 2 pound pork tenderloin
  • sea salt and pepper, to taste
  • 2 teaspoons extra virgin olive oil
  • 12 ounces blackberries
  • 1 cup red wine
  • 1/3 cup maple syrup
  • 2 tablespoons fresh orange juice
  • 1 tablespoon orange zest
  • 2 tablespoons fresh mint leaves, additional for garnish

Directions

Prep: 1. Preheat oven to 400. 2. Sprinkle your pork tenderloin with sea salt and pepper. 3. Zest and juice orange. Make: 1. Heat olive oil over medium heat in a dutch oven or oven-safe skillet. 2. Brown all sides of the meat, then place in oven and roast, uncovered, for about 20 minutes. Remove from the oven and let rest, covered, for 10 minutes. 3. Meanwhile, in a small skillet add blackberries, wine, maple syrup, orange juice, and orange zest. Cook for about 10 minutes until the berries have started to soften. 4. Add hot berry mixture and mint leaves to a blender and puree until smooth. Add mixture back to your skillet and simmer until the sauce is thick and hot. 5. Slice your pork after it has rested, drizzle with blackberry sauce and sprinkle with chopped mint if desired.

Notes

If you have time you can cook the pork low and slow - 325 for 3-4 hours - for a more tender roast.
