5 Minute Blackberry Cobbler

Ingredients

  • 8 ounces blackberries
  • 3 1/2 tablespoons sugar, divided
  • 1/2 cup flour
  • 1/2 cup rolled oats
  • 1/2 teaspoon baking powder
  • 4 tablespoons cold unsalted butter
  • pinch of sea salt
  • 4 tablespoons milk (optional)

Directions

Make: 1. Evenly distribute blackberries between 4 wide mouth jars or microwaveable mugs. Sprinkle each with 1 teaspoon sugar (or more to taste if your berries are tart). Microwave together for 45 seconds or for 10-15 seconds each. 2. Meanwhile, mix together flour, oats, salt, baking powder and 2 tablespoons of sugar. Crumble in butter with your fingers until mixture resembles crumbs. 3. Add in milk and stir to combine. (For a crumblier crust you can leave out the milk.) 4. Top the blackberries with the topping mixture and microwave for 1 minute and 20 seconds (time may vary slightly based on your microwave). 5. Carefully remove and enjoy!

Notes

These may splatter a bit depending on how juicy your berries are. If it does just make sure to wipe up immediately. To try and prevent spattering you can microwave it in shorter bursts.
