Prep: 1. Mince garlic, jalapeno, and cilantro. 2. Juice lime. Make: 1. In a large bowl, mix lime juice, olive oil, garlic, jalapeno, cilantro, cumin and salt. 2. Add the bell peppers, mushrooms, and onion. Toss to coat. Let marinate for 15 minutes (or up to an hour), mixing once or twice. 3. Preheat oven to 250. 4. When vegetables are marinaded, heat a large skillet over high heat. Generously coat the pan with oil. Add the marinated vegetables, discard marinade. 5. Cook, stirring infrequently, until the vegetables are starting to sear at the edges, 5-7 minutes. 6. Meanwhile, wrap tortillas in foil and heat in the oven. 7. Serve immediately with warmed tortillas.
