Prep: 1. Cut, mince, dice - chicken, garlic, scallion, red bell pepper. 2. Cut broccoli into florets. 3. Whisk together peanut butter, tamari, sriracha and 1/4 cup chicken broth. Make: 1. Heat oil over medium-high heat until hot. Add chicken and stir fry until browned on the outside, about 3 minutes. 2. Add garlic, scallion, bell pepper and broccoli and stir-fry about 2 to 3 minutes. 3. Pour peanut sauce over chicken and veggies and toss to coat. If desired, add additional chicken broth for a thinner sauce. Cook until broccoli is crisp tender, about 2-3 more minutes. 4. Season with red pepper flakes, if desired. Top with peanuts and serve.
If you don't have coconut oil, peanut or canola oil is just fine. Soy sauce can easily be substituted for tamari. This is also great with chili garlic sauce instead of sriracha if you have it on hand.
