Ingredients

  • 2 carrots, chopped, divided
  • 1/4 small red onion, coarsely chopped
  • 1 tablespoon fresh ginger, chopped
  • 3 limes, juiced
  • 2 tablespoons sesame oil
  • 3 tablespoons miso paste
  • 1/4 cup water
  • sea salt and black pepper, to taste

Directions

Prep: 1. Chop carrots, onion, ginger. 2. Juice lime. Make: 1. In a blender, combine the carrots, onion, lime juice, sesame oil, miso paste, ginger, water, salt, and pepper. Blend until smooth, adding additional water if needed.
