Buttermilk Biscuits

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tablespoon (15 grams) baking powder
  • 3/4 teaspoon sea salt
  • 3/4 teaspoon baking soda
  • 8 tablespoons chilled unsalted butter, cut into small chunks
  • 3/4 cup buttermilk

Directions

Prep: 1. Preheat oven to 400 and line a baking sheet with parchment paper. 2. Cut butter into cubes. Make: 1. Whisk together flour, baking powder, salt and baking soda. Rub the butter cubes into the flour mixture with your fingertips, or use a pastry cutter. 2. Once dough is a course meal, add buttermilk and stir until just combined. Press it together with your hands to ensure that it holds together. 3. Roll out dough on a floured surface until 1/2 to 3/4-inch thick. Cut using a round cutter (jar lid or measuring cup is fine) and place on baking sheet. (or make drop biscuits by just dropping scoops of dough onto the baking sheet) 4. Bake until biscuits are down through, about 12 to 15 minutes.

Notes

These are a great prep ahead item, just form the biscuits and then freeze! Bake them straight from the freezer, just add a extra couple minutes.
