Whole Roasted Cauliflower

Ingredients

  • 1 head cauliflower
  • sea salt and pepper, to taste
  • 1/3 cup plain yogurt
  • 2 teaspoons dijon mustard
  • 2 tablespoons unsalted butter, melted

Directions

Prep: 1. Preheat oven to 400. 2. Remove any leaves from cauliflower. Make: 1. Season the cauliflower with salt and pepper, place on a baking sheet and roast for 15-20 minutes. 2. Meanwhile, combine yogurt, mustard, and butter. 3. Remove cauliflower from oven and spread with mixture. 4. Return to oven and roast until soft and browned, 40-45 minutes.
