Prep: 1. Preheat oven to 325 and lightly grease a large baking sheet. 2. Combine the ground flaxseed with the hot water in a large bowl, and let it sit until thickened, about 5 to 10 minutes. Make: 1. Whisk together the flour, almond flour, coconut, baking powder, and salt in a medium bowl. 2. Whisk oil and sugar into the flaxseed mixture. Then combine with the dry ingredients. 3. Drop cookies (about 1 tablespoon in size) onto a cookie sheet and flatten (the greased bottom of a drinking glass works well). Then, using your thumbs, press indentations in the center of each cookie and fill each indentation with about 1 teaspoon of jam. 4. Bake the cookies until golden brown, about 15 to 20 minutes.
