Prep: 1. Preheat oven to 325. 2. Generously grease a 9 inch cake pan or bundt pan and dust with flour. We recommend a spring-form round cake pan (line the bottom with parchment paper and grease/ flour the sides). 3. Make the brewed coffee, set aside to cool, combine with 1/3 cup whole milk. Make: 1. Sift together together flour, baking soda, salt, ginger, cinnamon, and black pepper. 2. In a separate bowl, use an electric mixer to cream together butter and sugars. Best in eggs and slowly pour in molasses while beating. 3. Alternate adding the sifted dry ingredients and the coffee/milk combo, beginning and ending with the dry ingredients. 4. Pour batter into prepared pan and bake for 50 minutes.
Delicious served with freshly made whipped cream (check out our recipe) Also try adding zest of 1 orange. Depending on how much spice you like you can increase the black pepper by up to 2 teaspoons. A bundt pan leads to beautiful presentation if you can successfully get the cake out, but this cake is notorious for sticking in all the nooks and crannies of a bundt pan so it you need guaranteed beautiful results we'd recommend sticking with a spring form pan.
