Slow Cooker Herbed "Roast" Chicken

Ingredients

  • 1 teaspoon dried sage
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1 whole chicken

Directions

Make: 1. Combine all of the spices and rub the seasoning mixture all over the chicken. 2. Place the chicken in the slow cooker breast side up, cover, and cook on low for 6 hours or on high for 2 1/2 - 3 hours. (A meat thermometer stuck into the thickest part of the thigh will read 165 degrees when it is done.) 3. Allow the chicken to rest for 10 minutes before slicing.

Notes

This fool-proof way to roast a chicken is a great way to start with roast chickens. You'll end up with a moist and tender chicken every time. Resist the urge to add liquid to this, it is perfect without it. You can also use poultry seasoning or any spice blend you like instead of the recommended herbs.
