Prep: 1. Preheat oven to 200. Pour oil to a depth of 2″ in a Dutch oven, or other heavy bottomed pan, and heat over medium heat until a deep-fry thermometer reads 350. See notes if you don't have a thermometer 2. Cut celery into sticks. 3. Dry wings thoroughly with paper towels. Make: 1. Working in batches, fry wings until golden brown, about 6 minutes per side. Transfer wings to a wire rack set over a baking sheet, and place in oven to keep warm until all wings are fried. 2. Meanwhile, melt butter in a large deep pan, once melted add hot sauce. 3. Once all wings are done frying add to the hot sauce and toss until completely coated. 4. Serve with celery and blue cheese sauce (if desired) on the side.
If you don't have a thermometer you can tell when the oil is hot enough by sticking in the handle of a wooden spoon, if the oil is hot enough it will bubble rapidly around the handle. Or you can add in a kernel of popcorn when you begin heating the oil. It will pop at just about 350!
