Prep: 1. Chop any veggies and herbs. Make: 1. Heat oil in a pan, if you have some raw veggies (not leafy greens) throw them in now, otherwise wait until you add the eggs for pre-cooked veggies and greens. 2. Whisk eggs, milk, and herbs/seasonings together and pour into hot pan, top with any pre-cooked veggies, cooked meats, grains, herbs and cheese you like. 3. Turn heat down, cover and cook until eggs are set about 10-12 minutes depending on thickness. OR cook for 3-5 minutes on the stovetop and then finish in the oven preheated to 400 for 8-10 minutes.
Use about 2-3 eggs, 1/8 cup milk, and 1/2 cup meat/veggie toppings, 2 teaspoons fresh herbs, and 1/8-1/4 cup cheese per person.
