Steak and Soba Stir-Fry

Ingredients

  • 8 ounces soba noodles
  • pinch of sea salt, to taste
  • 1 teaspoon plus 3 tablespoons peanut oil
  • 12 ounces flank steak
  • pinch of freshly ground black pepper
  • 2 scallions, whites and greens separated, chopped
  • 4 medium garlic cloves, chopped
  • 1 tablespoon grated fresh ginger
  • 2 baby bok choy, quartered
  • 1 medium carrot, peeled and thinly sliced on a diagonal (optional)
  • 3 tablespoons fish sauce
  • 3 tablespoons soy sauce
  • 3 tablespoons rice vinegar
  • 1 tablespoon sesame oil

Directions

Prep: 1. Boil water for noodles. 2. Season steak with salt and pepper. 3. Chop scallions, mince garlic, grate ginger, quarter bok choy, slice carrot. Make: 1. Cook noodles according to package instructions (when done drain). 2. Heat 1 teaspoon peanut oil in a large skillet over medium high heat. Sear steak about 4 minutes per side for medium rare, or 7 for well done. Remove from pan, cover with foil and let rest before slicing. 3. Meanwhile, heat remaining oil, add white parts of scallions, garlic and ginger, let soften for about 1 minute. Add in bok choy and carrot and cook, tossing occasionally until crisp tender, about 4 minutes. 4. Meanwhile, whisk together fish sauce, soy sauce, vinegar, sesame oil, and 1/2 cup water. Add to vegetables and bring to a simmer. Fold in remaining scallions and noodles. 5. Slice steak and toss with veggies and noodles.
