Make: 1. In the large bowl of a food processor, pulse the oats until fine, about 2 minutes. 2. Add the flour, almond butter (or whatever nut butter you prefer), and honey, to the oats. Pulse again until the mixture comes together, about 2 minutes. By hand, stir in chocolate chips. 3. Using a tablespoon, place a small amount of dough in your hands and roll it into a ball anywhere from marble to golf ball sized. Roll each cookie in the shredded coconut. 4. Refrigerate the cookies for 10 minutes before serving.
These are also great with dried fruit added in.
