Prep: 1. Chop salmon, green onions, parsley, and capers. 2. Slice tomatoes and cucumber. 3. Juice lemon. Make patties: 1. Combine chopped salmon in bowl with green onions, breadcrumbs, egg, parsley, 2 tablespoons of lemon juice, mustard, salt, and pepper. 2. Set a skillet over medium-high heat and add a drizzle of oil. 3. Shape the mix into four patties and put them in pan. Cook until deep golden brown and cooked through, about 2-3 minutes per side. Make mayo: 1. Stir together mayo, 1 tablespoon of lemon juice, capers and pepper. Serve: Spread mayo on on buns (if using) or lettuce wraps topped with sliced tomatoes and cucumbers.
