Prep: 1. Preheat oven to 350, grease a 9 inch baking pan (square or round). 2. Bring butter to room temperature or gently soften in microwave. 3. Shred zucchini. Make: 1. Using an electric mixer, cream together butter and sugar. 2. Gradually mix in eggs and vanilla. 3. In a separate bowl whisk together flour, cocoa powder, baking powder, ground cloves, and cinnamon. 4. Using the electric mixer, combine dry ingredients and buttermilk with butter mixture, alternating between dry ingredients, butter, and buttermilk. Mix thoroughly between each addition. 5. Stir in zucchini last, stir softly to combine. 6. Pour into prepared baking pan and top with chocolate chips (if using). 7. Bake for 40-45 minutes.
If you don't have buttermilk on hand, sour regular milk by adding in a teaspoon of lemon juice or vinegar.
