Watermelon Caprese Salad

Ingredients

  • 1 pint cherry tomatoes, halved
  • 2 cups of watermelon cut into 3/4-inch cubes
  • 8 ounces fresh mozzarella, cubed
  • 1/4 cup large basil leaves, torn
  • 1 teaspoon sea salt
  • 1 tablespoon balsamic vinegar, or to taste
  • 2 tablespoons extra-virgin olive oil, or to taste

Directions

Prep: 1. Halve tomatoes, cube watermelon and fresh mozzarella. 2. Tear or chop basil. Make: 1. Add the tomatoes, watermelon, mozzarella, and basil to a large mixing bowl. Sprinkle with salt, drizzle with oil and vinegar, and gently toss to coat.

Notes

This delicious side is the perfect addition to any picnic, potluck, or barbecue.
