Ingredients

  • 1 pound ground pork
  • 1/4 cup minced scallion
  • 1/2 teaspoon ground ginger
  • sea salt and black pepper to taste
  • 4 pineapple rings
  • 1/4 cup barbecue sauce
  • 1/4 head of green leaf lettuce
  • 1/4 pound thinly sliced ham

Directions

Prep: 1. Preheat grill. 2. Mince scallion. 3. Slice pineapple, if using fresh. Make: 1. Mix the ground pork, scallion, salt, pepper and ground ginger together in a large bowl until just combined. Form 4 equal patties. 2. Place the pork patties on the hot grill and brush with barbecue sauce. Cover the grill and cook for 5-7 minutes per side, brushing with more bbq sauce once flipped. 3. When you flip the burgers add the pineapple rings to the grill and cook for 6 minutes, flipping halfway through. 4. Let burgers rest about 5 minutes, then brush with additional sauce if desired, and top with the ham, pineapple, and lettuce.

Notes

If desired also serve these with buns (a carb side in the Gatheredtable Library). If you don't have a grill these can just as easily be done inside on a grill pan or skillet. Check out our favorite tips for grilling here - http://blog.gatheredtable.com/2015/06/26/barbecue-basics/ Fresh pineapple is so delicious! But how to you even start?
