Spicy Sausage and Bell Pepper Pasta

Ingredients

  • 16 ounces penne pasta
  • 2 tablespoons extra virgin olive oil
  • 1/2 red onion, sliced
  • 2 yellow bell peppers, cut into strips
  • 1 pound turkey sausage
  • pinch of crushed red pepper, to taste
  • 1 1/2 cups cherry tomatoes, halved
  • sea salt and black pepper, to taste

Directions

Prep: 1. Boil water for pasta. 2. Slice onion and cut pepper into strips. 3. Remove sausage from casing if necessary. Make: 1. Cook pasta according to package instructions (when done drain and return to pan). 2. Meanwhile, heat the olive oil over medium-high heat in a large sauté pan. Add the onion, peppers, and sausage. Cook for about 5 minutes, stirring occasionally. 3. Toss the pasta with the onions, peppers, and sausage. Add the tomatoes and Parmesan cheese. Season with salt and black pepper, to taste. Serve immediately.

Notes

A summer staple to please a crowd! This is also great as a cold pasta salad drizzled with a little extra olive oil and vinegar (or your favorite vinaigrette, the Garlic Basil Vinaigrette in the Gatheredtable Recipe Library is great!)
