Prep: 1. Place oven rack toward the top of the oven, and preheat the broiler. Make: 1. Place the whole peppers in a baking dish, coat with oil, and roast for about 20 minutes, turning the peppers halfway through. Keep an eye on them so they char but don't burn. 2. Remove the peppers from the oven and cover with foil for about 20 minutes. 3. Peel off the skin of the peppers, if it doesn't all come off don't worry. 4. Cut into strips, de-seed and serve.
