Ingredients

  • 1 pound tilapia, trimmed into 4 squares
  • sea salt and freshly ground pepper
  • 1 tablespoon flour
  • 1 egg, lightly beaten
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons tartar sauce
  • 4 slices provolone cheese
  • 4 hamburger buns

Directions

1. Season both sides of the fish with salt and pepper. 2. Place flour in one bowl, the beaten egg in another, and breadcrumbs in a third. 3. Lightly dust fish with flour, then dip into the egg and then the panko, pressing to make sure the crumbs adhere. Repeat for each piece. 4. In a skillet, heat oil over medium high heat. When hot, add the fish and cook until golden brown, and cooked through, about 2-3 minutes per side (more for thick filets). Top each fish patty with a slice of cheese, cover pan and let cheese melt. 5. Once cheese is melted, spread tartar sauce on the buns and assemble the burgers.
